This recipe is AWESOME! I developed it last summer when nectarines were in season but never wrote it down. This year it took me a few tries to get it right, and I’m so glad I finally did.
I love this recipe because the texture is thick and creamy just like yogurt, but without the dairy. My son refuses to eat fruit as a snack and so I am always finding new ways to serve him “treats” that are actually healthy. This recipe passed the test with flying colors – his licked the bowl clean within 5 minutes of sitting down. This is exciting because if I put a piece of nectarine on his plate, he would sit there until pigs flew without putting it in his mouth. Even when I make him take bites of fruit,he will sit there with it in his mouth for a long time without chewing it. So the recipe is a definite delicious success.
Hemp seed is the seed of a hemp plant. Surprised 🙂 ? Many people associate hemp with marijuana, but they are not the same. You will experience no psychedelic experience from eating hemp. You might feel awesome, but not in the “Peace, duuude” way. I love using hemp seed when blending fruit because it adds an amazing creamy texture. Hemp seed is full of essential Omega 3 and 6 fats and is a great source of protein, so I feel it is great for a breakfast food. It is light, but filling and satisfying.
The nectarines bring a natural sweetness, along with coconut oil to add to the richness of this recipe. If you prefer peaches over nectarines, they would also work because the texture is similar.
